Irish Apple Cake

I made this receipe last week, to celebrate having everyone home again (my husband had been in America for 5 days)

Apple Cake (based on a recipe from irish cook Rachel Allen)

  • 2 eggs
  • 175 g caster sugar, plus extra for sprinkling
  • 1/2 tsp vanilla extract
  • 85 g butter
  • 75 ml milk
  • 125 g plain flour
  • 1/2 tsp ground cinnamon (optional)
  • 2 1/4 tsp baking powder
  • 2 cookingapples, peeled, cored and thinly sliced

Method

Preheat oven to 180 degrees C and line an 8×8 inch tin with baking paper.

Use an electric whisk to beat sugar, eggs and vanilla for 5 minutes until the mixture is pale and thick.

Melt the butter and milk in a saucepan and add to the mixutre.

Fold in the flour, cinnamon and baking powder.

Pour over the mixture into the tin.

Arrange the apple on to of the mixture – poking each piece about half way in.

Bake in oven for  20-25 minutes.

Sprinkle with sugar and cut into squares when cool. The apple will have sunk to the bottom – delicious!!!

  1. This looks wonderful! I am going to get some apples at market tomorrow and make this! We finally turned off the air conditioning and can sleep with the windows open. Fall is almost here in Southern Italy!

  2. JM this cake looks altogether tasty – I may have to make it for Church this Sunday! To be honest, I downloaded a cookbook to my kindle the other day and there was a recipe very similar (with the same name) and I was eyeing it up!

  5. It’s supposed to be really hot here at this time of year but I’m in scarves and jackets as we’re having another cold spell! not that I mind, the beautiful grey skies remind me of Ireland.

  6. Yummy! The kids are off school for halfterm hols. Just the right time to stay home and bake lots of scrummy things like the apple cake. It really is freezing at the minute isn’t it! Don’t know what winter has in store for us this year.
